Mini Candy Tree Cupcakes

Top mini chocolate cupcakes with these cute candy trees. Made in shades of green, pink and blue, these Mini Candy Tree Cupcakes are a fun and colorful addition to your Christmas or holiday party.   1. Melt candy. Tape sheet of waxed paper, about 14 in. long, to cake board.

    Melt 4 oz. desired color of candy according to package instructions. Use EZ Thin, if necessary, to thin consistency of candy.

    Pour melted candy on waxed paper. Spread candy thin using 13 in. spatula. Allow candy to just set, about 5 minutes.

    Print out triangle pattern. Cut out pieces. You will need one full triangle and six smaller triangles for each tree.

    Using craft knife and cut patterns, cut candy triangles.

    Chill until set, about 10 minutes. Remove from wax paper. Repeat with remaining candy colors. Save candy trimmings for later step.

  2. Assemble toppers. Working with one color at a time, melt candy trimmings in shallow bowl. With same color triangles, dip straight edge of small triangles into melted candy and stick to center of full triangle. Repeat with another small triangle to opposite side of full triangle. Repeat twice more, placing candy triangle on either side of center piece.

    Repeat step on other side of flat triangle. Let dry standing up on waxed paper.

    Repeat with remaining candy colors.

  3. Bake mini cupcakes. Prepare cake batter following recipe instructions. Bake and cool mini cupcakes in white cupcake liners.
  4. Decorate cupcakes. Prepare decorating bag with tip 1A and chocolate icing. Pipe small amount of icing on each mini cupcake. Top with candy topper.
