Candy Rainbow Cupcakes

Turn homemade (or store-bought) cupcakes into something special with a cute candy rainbow topper. Made using several colors of Candy Melts candy, these little candy rainbows turn your treat into something fun to eat! Serve for St. Patrick's Day or a spring bridal or baby shower. Easy to make, these Candy Rainbow Cupcakes are great for beginners and perfect for a last-minute party idea or celebration.

  1. Melt candy. Melt blue, lavender, pink, green, white, yellow and turquoise candy in decorating bags, separately, according to package directions.

    On waxed paper-covered cake board, pipe rainbow arches (first pink, followed by yellow, green, turquoise and lavender), about 2½ in. wide. Let set, about 3 to 5 minutes.

    Using melted white candy, pipe several dots on either end of rainbow arch. Let set, about 2 minutes. Pipe more dots on top of the first to create 3D clouds. Chill until set, about 5 minutes.

  2. Bake cupcakes. Prepare cake batter following recipe instructions. Bake and cool cupcakes in white cupcake liners.
  3. Tint icing. Using Sky Blue icing color, tint icing light blue.
  4. Decorate cupcakes. Prepare decorating bag with tip 1M and light blue icing. Pipe swirl on each cupcake. Top with rainbow candy topper.
