Students explore an inspiring range of disciplines, including Cake Baking Foundations, Pastry, Modern Cake Design, Chocolate Artistry and Technique, and Sugar Artistry and Technique, with focused workshops in Macarons and Bread that deepen essential skills and flavor understanding.

Modern Cake Design
Step beyond decoration and into design. This three-part program redefines contemporary cake artistry through a balance of precision, composition, and creative vision. From foundational piping to advanced floral work and multi-tier construction, each course builds toward mastery — blending technical skill with design intuition.
Students completing the full program gain a refined understanding of piping, texture, color, structure, and form — and the confidence to create cakes that are as artful as they are architectural.

Bring together everything you’ve learned in this advanced, two-day intensive focused on multi-tier construction. Learn the complete process of planning, building, and finishing professional cakes — from internal structure and fondant covering to gum-paste embellishment. Emphasis is placed on clean execution, balanced composition, and professional presentation. Each student completes a final project that showcases individual style and technical mastery. (2 days — Advanced, Prerequisite: Course 2 or equivalent experience)

With training in Italy, France, and the United States—and leadership experience at Chicago’s top hotels—Walleska Cianfanelli brings professional precision and creative flair to the Wilton Master Series. As Wilton’s Executive Pastry Chef and Culinary Education Lead, she blends technical mastery with a visionary approach to modern cake design and edible artistry.
Trained by world-renowned pastry chefs and certified by the Italian Culinary Institute and The French Pastry School, Walleska’s expertise spans whimsical teatime confections, intricate edible art, and a patented chocolate. Her international background and teaching experience, including at the IGRC Culinary Institute in Costa Rica, inspire students to refine their craft, expand their creativity, and design with confidence.

Master Series FAQ
Get ready for an inspiring, hands-on experience at the Wilton Sweet Studio. Our Master Series FAQs cover everything you need to know before class—from what to bring, to what to expect, to how each course supports your growth as a decorator. Explore the details below to feel confident, prepared, and excited for your upcoming Master Class.
We provide all ingredients, supplies, tools, and aprons needed for use during each class—so all you need to bring is your creativity! Because we believe students learn best by doing, each participant is assigned their own workstation fully stocked with individual tools, equipment, and materials.
Students will be provided with all recipes and resources in a handout.
We also supply all packaging and boxes, and you’ll go home with instructions on how to store, freeze, and thaw your cakes or treats so you can enjoy your handiwork later.
Please wear comfortable closed-toe shoes (workstation chairs are available). You may also want to bring a cardigan or light sweater, as the studio and kitchen are kept at 68°F.
The Wilton Sweet Studio is committed to providing an exceptional, hands-on learning experience. To help us create a smooth, supportive, and uplifting environment, please keep the following guidelines in mind:
Arrive on time. If you’re new to the area, plan a little extra time to navigate so you can begin class relaxed and ready. The Studio door open 15 minutes before class start time.
Limit cellphone use. To stay fully engaged, please avoid virtual meetings or ongoing digital activities during class hours. During instructor demonstrations, keep side conversations brief so everyone can follow along. Photos and short videos for personal use or social sharing are welcome.Please silence your phone in the classroom.
Practice kindness and patience. Our students bring a wide range of experience levels, learning styles, and cultural backgrounds. Please respect the pace and creativity of your fellow bakers.
Master Classes are limited to 12 students maximum to ensure every student receives ample instruction and individual feedback.
All Sweet Studio Master Classes are primarily hands-on with instructor-led demonstrations throughout the day to introduce and reinforce each technique.
Yes. One of the hallmarks of a Wilton Master Class is the personalized attention each student receives throughout the course.
Course 1 establishes foundational movement and pressure-control techniques that prepare students for composition, dimensional work, and advanced textures in Courses 2 and 3.
Most students choose to complete the full series to develop a cohesive and confident modern piping skill set.
Master Class hours vary by discipline, but all classes begin at 9:00 AM and run through most of the day. Students are encouraged to bring a lunch to store in our break-room refrigerator.
Alternatively, you may opt to have lunch delivered from one of the many near-by restaurants.
- Long hair must be tied back
- Closed-toe footwear must be worn in our Studio and Kitchens
- Sweet Studio recipes and ingredients may contain peanuts, tree nuts, soy, milk, eggs and wheat. Please contact us prior to your class start date if you have dietary concerns.

- Each Master Class awards a Certificate of Completion.
- Students who complete four or more Master Courses earn the Wilton Certificate of Advanced Techniques
- Students who successfully complete all Master Courses earn the Wilton Certificate of Advanced Mastery
Travel and Accommodations
The Sweet Studio is located in Naperville, approximately 30–40 minutes from both Chicago O’Hare International Airport and Midway International Airport. The area offers a wide range of hotels, restaurants, and amenities. Parking is plentiful and free at our building, which is conveniently located next to Interstate 88.

We understand that plans can change. Please review the following guidelines for cancellations, refunds, and program credits as they pertain to Master courses:
- Requests for a cancellation or refund must be received at least 14 days before the program start date.
- Requests for a credit toward a future class or program must be received at least 10 days before the start date.
All requests must be submitted in writing via email to wiltonsweetstudio@wilton.com, Phone calls requesting a refund or credit will not be honored. Please include the following information in your email:
- Course name
- Date the course begins
- Enrolled student’s full name
- Transaction invoice number
Program Cancellation
In the event that your class is cancelled due to bad weather, low enrollment, or other unforeseen circumstances, we will notify you as soon as possible by email and issue you a full refund.
While we don’t sell products on-site, you’ll find most items through large retailers like Amazon or Walmart, Micheal’s craft stores, and many of your favorite local or regional grocery stores.
