

Lemon Panna Cotta with Macerated Berries

Ingredients
2 1/2 cups heavy whipping cream
2 1/2 cups milk
2 tablespoons granulated sugar
1 tablespoon finely grated lemon zest
3 envelopes (1/2 ounces each) unflavored gelatin
1/4 teaspoon Pure Lemon Extract, 2 oz.
1 teaspoon Wilton Imitation Clear Vanilla Extract
1 1/2 cups mixed berries
1 tablespoon lemon juice

- Prepare 6 Cavity Mini Fluted Tube Pan with vegetable pan spray.
- In medium saucepan, combine heavy cream, milk, sugar and zest. Warm over medium heat until mixture begins to steam, stirring continuously. Remove from heat and whisk in gelatin and extracts; whisk until gelatin is dissolved, about 2-3 minutes.
- Carefully divide mixture among pan cavities. Chill in refrigerator until set, 4 hours or overnight.
- In small bowl, combine berries, remaining sugar and lemon juice. Cover and refrigerate, stirring occasionally, until fruit is soft; about 1 hour.
- To serve, carefully run spatula around edges of panna cotta and remove. Fill the center with berries.
