Goat Cheese, Spinach and Chive Tart

This savory tart is built upon a layer of store-bought pie crust and topped with goat cheese, baby spinach and chives. It makes an impressive and easy party appetizer or weeknight dinner. Serve this tart warm or chilled, along with a fresh green salad.

  1. Preheat oven to 350ºF.
  2. Unroll pie crust and fit into 9 in. springform pan, pressing into place on sides of pan. Bake 10 minutes or until lightly browned. Let cool 5 minutes on cooling grid.
  3. In large bowl, beat cream cheese, goat cheese, sour cream, flour, salt and pepper with electric mixer on medium speed until smooth and creamy. Add eggs one at a time, beating on low speed until smooth, about 2 minutes. Scrape down bottom and sides of bowl often. Stir in chopped spinach and chives and pour into prepared crust, smoothing top.
  4. Bake 30 to 35 minutes or until center is set. Turn oven off and leave in oven 20 minutes. Remove from oven and let cool on cooling grid for at least 20 minutes before unmolding.
  5. Cheese tart may be served warm or chilled.
