Easy Oatmeal Chocolate Chunk Cookies

Oatmeal cookies with chunks of gooey chocolate and crunchy walnuts? Yes, please! This recipe has the best of both worlds with delicious flavors and sweet and yummy chocolate. You can skip the nuts if you feel like it but never skimp on the chocolate. It’s easy to bake up a batch of these cookies from scratch for dessert or as an afternoon treat with milk or coffee.

  1. Preheat oven to 350°F. Prepare cookie sheets with parchment paper or with vegetable pan spray.
  2. In medium bowl, stir together flour, baking powder, cinnamon, salt and nutmeg.
  3. In large bowl, beat butter and sugars with electric mixer until light and fluffy. Add vanilla extract and eggs, one at a time; mix well. Add flour mixture, beating until combined. Scrape down bottom and sides of bowl. Add oats, chocolate chunks and walnuts. Drop by rounded tablespoons onto cookie sheet, spacing 2 in. apart.
  4. Bake 12-15 minutes or until light golden brown. Cool on cookie sheet on cooling grid 3 minutes. Remove to cooling grid; cool completely.
