Birthday Cake Cupcakes

  1. Preheat oven to 350°F. Line muffin pans with baking cups.
  2. In large bowl, sift together flour and baking powder.
  3. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add vanilla; mix well. Add flour mixture alternately with milk; mix well.
  4. In separate clean bowl, beat egg whites until stiff but not dry; fold into batter. Fold in sprinkles. Fill baking cups 2/3 full.
  5. Bake 17-19 minutes or until toothpick inserted into center of cupcake comes out clean. Cool cupcakes in pan on cooling grid 5 minutes. Remove from pan; cool completely.
  6. For icing, beat shortening and butter in large bowl with electric mixer until smooth. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. Add milk and beat at medium speed until light and fluffy. Fold in sprinkles. Pipe or spread icing on top of cupcakes.
