

Vegan Peanut Butter Cookies

Ingredients
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup peanut butter
8 tablespoons vegan butter
1 cup firmly packed dark brown sugar
1/4 cup unsweetened applesauce
1 teaspoon Clear Imitation Vanilla Extract, 2 oz.

- Preheat oven to 375°F.
- In small bowl, combine flour and baking soda. In large bowl, beat peanut butter, butter and brown sugar with electric mixer until light and fluffy. Add applesauce and vanilla; beat until combined. Slowly add flour mixture; beat until combined. Form dough into 1 in. balls; roll in sugar. Place on ungreased cookie sheet; flatten with the bottom of a glass.
- Bake 6-8 minutes or until golden brown. Cool on cookie sheet 2 minutes; remove from pan and cool completely on cooling grid.
