  • 2 tablespoons ground flax seeds
  • 1 ½ medium zucchini
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons poppyseeds
  • For the Glaze: 1 1/2 cups sifted confectioners' sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon unsweetened oat milk

Notes

The zucchini bread doesn't rise as much as traditional zucchini bread given the substitution of a flax egg for a dairy egg, but this is common in vegan/egg-free baking. It still comes out moist and delicious.
