  1. Preheat the oven to 325 degrees F. Generously grease two cookie sheets with shortening.
  2. Print or write 12 fortunes on strips of paper about 2 1/2 inches long and 1/2 inch wide.
  3. Sift flour, sugar, cornstarch, and salt together into a bowl. Stir with a whisk until well combined.
  4. Whisk egg white, vanilla extract, and almond extract together in a separate bowl until foamy but not stiff.
  5. Add the egg white mixture and the water to the bowl with the flour mixture. Stir until well blended. If the batter seems too thick, add an additional 1/2 to 1 tablespoon water, a little at a time until it is a consistency that can be spread thin.
  6. Drop two 1/2-tablespoon spoonfuls of batter at least 4 inches apart onto one prepared cookie sheet. Use the back of the spoon to spread the batter into very thin 3-inch to 3 1/2-inch diameter circles.
  7. Bake in the preheated oven until cookies are golden on the outer edge, about 5-7 minutes, watching closely to make sure they don't overly brown.
  8. Remove from the oven. Quickly lift one cookie with a spatula and flip upside down onto the cookie sheet. Place a fortune on the cookie in the center, and fold cookie in half around the paper, pinching the edges together. Place the folded edge over the rim of a coffee mug and pull the pointed edges downward around the edge of the mug to form the shape. Place into a cup of a muffin tin to hold its shape as it cools. Repeat to fill and form the second cookie.
  9. While the first batch is baking, add two more spoonfuls of batter to form two more cookies on the second cookie sheet, then alternate baking and shaping two cookies at a time, repeating until all cookies are baked and shaped. Note: Don't make more than two cookies at a time, as they must be really hot to shape properly.
  10. Allow cookies to cool and dry completely to crisp. Cooling completely before the next step is important for ensuring a crispy fortune cookie.
  11. After cookies have cooled and crisped completely, melt Pink and Light Cocoa Candy Melts according to package instructions, one color at a time.
  12. Dip the rounded half of cookies into the melted candy, then set on a piece of parchment paper to dry, adding sprinkles on top of the Candy Melts on half of the cookies while still wet. For the other half of the cookies, drizzle stripes with the Candy Melts of the opposite color (pink on cocoa, cocoa on pink) by placing the remaining melted Candy Melts into decorating bags fitted with a #2 round tip. Allow Candy Melts to set completely, then store in an air-tight container in a cool, dry place.
