Tropical Candy Leaf Cake

Whether you’re celebrating a retirement or just want a little taste of warmer weather, this Tropical Candy Leaf Cake is a fun way to celebrate. Decorated with light and dark coral icing, then finished with sweet candy leaves, this cake is great for almost any celebration. Use candy colors to tint your candy various shades of green or create candy leaves using your favorite Candy Melts candy colors. A fun way to try your hand at candy crafting, this Tropical Candy Leaf Cake is sure to be a fun project for decorators of all skill levels.

  1. Bake cake. Prepare cake batter following recipe instructions. Bake and cool two cake layers. Trim each layer to 2-1/2 in. high. Level, fill and stack for 5 in. high cake.
  2. Tint candy. Melt 2 oz. Dark Green candy and two separate 2 oz. portions of Bright White candy according to package directions.

    Using green candy color, darken dark green candy.

    Using green and black candy colors, tint 1 portion melted white candy medium green.

    Using yellow* and green candy colors, tint 1 portion melted white candy bright green.

    *If you cannot find yellow candy color, you can also use a small amount of Yellow Candy Melts candy.

  3. Make leaves. Prepare decorating bag with melted dark green candy. Cut 3/4 in. off tip of bag.

    Pipe a thick line of candy onto a piece of parchment paper. Make it as tall as you want your leaf to be. This will be the center of your design.

    Place tight triangle comb in center of piped line, then swipe candy from center out, at an angle. Clean comb, then repeat on the other side.

    Using short side of comb, create a leaf shape by making a vertical curve on each side of center line, connecting top of leaf to bottom. Chill until set, about 5 minutes.

    Repeat, making about 6 to 9 leaves of each color. Leaves should range in size between 2 and 4 inches.

  4. Tint icing. Tint about 4-1/2 cups icing light coral and 1 cup dark coral using color combinations provided. Combine Creamy Peach and Pink food coloring to get light and dark coral colors shown.
  5. Decorate cake. Using light coral buttercream, ice cake smooth.

    Prepare decorating bag with tip 1M and dark coral icing. Pipe small swirls around top of cake.

    Arrange leaves around base of cake. If needed, use buttercream on back of leaf to attach.
