  1. Preheat oven to 350°F. Prepare 2 Daily Delights mini round pans with vegetable pan spray.
  2. In medium bowl, whisk together flour, sugar, baking powder and salt. Add milk, butter, and vanilla extract; mix well. Stir in Rainbow Jimmies, if desired.
  3. Divide batter evenly between cavities, spreading into an even layer (about 1 teaspoon per cavity).
  4. Bake 7-9 minutes, or until toothpick inserted in center comes out clean.
  5. Cool cakes in pan on cooling grid 3 minutes. Remove from pan; let cool completely.
  6. To assemble stacked cakes, pipe a rosette of icing onto a layer. Stack another layer on top, topping with another rosette, and finish with another layer and more icing. Sprinkle with sprinkles, if using.
