1/2 cup all-purpose flour
1/3 cup granulated sugar
3 tablespoons cocoa powder
1/2 teaspoon baking powder
1/8 teaspoon salt
1/4 cup vegetable oil
1/4 cup milk
1/2 teaspoon vanilla extract
1 egg
Chocolate Glaze
3/4 cup powdered sugar (confectioners’ sugar)
2 tablespoons cocoa powder
4 teaspoons milk
Vanilla Glaze
3/4 cup powdered sugar (confectioners’ sugar)
2 1/2 teaspoons milk
1/4 teaspoon vanilla extract

- Preheat oven to 350°F. Prepare 2 Daily Delights mini fluted tube pans with vegetable pan spray.
- In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder and salt; set aside.
- In small bowl, whisk together vegetable oil, milk, vanilla extract and egg. Pour into flour mixture; mix well.
- Divide batter evenly between cavities, filling about half full with approximately 2 teaspoons of batter per cavity.
- Bake 7-9 minutes or until toothpick inserted in center of cakes comes out clean.
- Cool cakes in pan on cooling grid 3 minutes. Remove from pan; cool completely. Drizzle with chocolate or vanilla glaze, as desired.
- To prepare chocolate glaze, in a small bowl, stir together powdered sugar, cocoa powder and milk. Drizzle over cakes.
- To prepare vanilla glaze, in a small bowl, stir together powdered sugar, milk and vanilla extract until smooth. Drizzle over cakes.
