Summer in the City Cake

Whether you’re hosting a birthday party or a weekend pool party with the family, this Summer in the City cake is a fun and colorful way to sweeten your celebration. Decorated with bright shades of pink, orange, blue, green, and yellow buttercream, this colorful cake screams summer fun! Add a few colorful jimmies for added color and texture.

  1. Bake cake. Prepare cake batter following recipe instructions. Bake and cool two cake layers. Level, fill and stack layers for 6 in. high cake.
  2. Tint icing. Tint 1-1/2 cups icing each lime green and light blue (for sides of cake); 3/4 cup icing each bright yellow and light orange (for top border); and ½ cup icing each bright pink and bright orange (for bottom border) using color combinations provided. Combine Lemon Yellow and a touch of Golden Yellow food coloring to get bright yellow color shown. Combine Orange and Lemon Yellow food coloring to get light orange color shown. Combine Leaf Green and Lemon Yellow food coloring to get lime green color shown. Combine Sky Blue and Leaf Green food coloring to get light blue color shown. Combine Rose and Pink food coloring to get bright pink color shown. Combine Creamy Peach and Pink food coloring to get bright orange color shown.
  3. Ice cake. Prepare two decorating bags, separately, with lime green and light blue buttercream. Cut 1/2 in. tip in each bag.

    Cover bottom half of cake with light blue buttercream and top half and top of cake with lime green buttercream. Smooth using icing smoother.

    Immediately use hands to lightly press sprinkles where two colors meet (we combined all the sprinkle colors except purple).

  4. Decorate cake. Prepare four decorating bags with tip 4B. Fill separately with bright yellow, light orange, bright pink and bright orange icing.

    Using bright yellow and light orange icing, pipe spiral border on top of cake, alternating colors.

    Using bright pink and bright orange icing, pipe shell border around bottom of cake, alternating colors.

    Sprinkle borders with remaining jimmies.
