  1. Gum Paste Ccolors Tinted:

    Tint ultra-concentrated gum paste. Use Color Right base colors and QuickCount color formulas to tint gum paste in the following shades:

    • Bright and Bold Purple (formula 254): 1 oz. gum paste + 2B + 22P
    • Neutral Green (formula 5585): 1 oz. gum paste + 1B + 1Y + 1BR
    • Pastel Yellow (formula 100): 3 oz. gum paste + 3Y

    Mix ultra-concentrated color gum paste with white gum paste.

    • For purple, knead a 3/4 in. ball of ultra-concentrated purple into 3 oz. white gum paste.
    • For green, knead a 5/8 in. ball of ultra-concentrated green into 3 oz. white gum paste.
    • For yellow, knead a 5/8 in. ball of ultra-concentrated yellow into 3 oz. white gum paste.

    Fondant Color Tinted: Use Color Right base color and QuickCount color formula to tint fondant in the following shade:

    • Pastel Purple (formula 2645): 24 oz. fondant + 3B + 1R + 6P
  2. Make purple wired agave three days in advance. Tint 3 oz. gum paste purple. Make a wired agave, with top row of four leaves, middle row of six leaves and bottom row of seven leaves following instructions in cut-outs set. Let dry and assemble following instructions.
  3. Make green echeveria also three days in advance. Tint 3 oz. gum paste green. Make an echeveria following larger plant option described in instructionsin cut-outs set. Let dry and assemble following instructions.
  4. Make yellow echeveria also three days in advance. Tint 3 oz. gum paste yellow. Make a standard size echeveria following instructions in cut-outs set. Let dry and assemble following instructions.
  5. Highlight petals two days in advance. For agave and green echeveria, use brush and combination of purple and deep pink Color Dust edible accents to brush leaves. For green echeveria, use combination of spruce green and white Color Dust to brush edges of leaves. For yellow echeveria, use combination of lime green and white Color Dust to brush leaves.
  6. Make cakes one day in advance. nBake and cool one 8 in. cake layer and two 6 in. cake layers.
  7. Cover cakes with fondant. Level, fill and stack cakes on same-size cake circles for a 1-layer 8 in. cake, 3 in. high and a 2-layer 6 in. cake, 5 in. high. Use spatula and icing to lightly ice cakes smooth.

    Tint 24 oz. fondant purple. Cover 8 in. cake with purple fondant and 6 in. cake with white fondant.

  8. Assemble cake. Prepare cakes for stacked construction with center core rods and support rods and caps. Stack cakes on cake plate.
  9. Position succulents. Insert agave in flower spike. Insert flower spikes in cakes. Use brush and gum glue adhesive to attach echeveria to cakes. Use small balls of fondant for additional support as needed.
