Encourage yourself and your loved ones—we can do this, one day at a time! This colorful cake combines spatula icing with simple piping to create a message of hope for difficult times. It has a bright palette sure to cheer anyone up, and it’s easy to customize with your own favorite color combinations.

  1. Bake Cake. Prepare cake mix according to recipe instructions. Bake and cool completely.
  2. Tint Icing. Combine Violet with a touch of Rose icing colors to get purple color shown. Combine Teal and Kelly Green icing colors to get teal color shown. Combine Lemon Yellow with a touch of Moss Green icing colors to get lime green color shown. Combine Rose with a touch of Violet icing colors to get pink color shown. Combine Royal Blue and Sky Blue icing colors to get blue color shown.

    Tint 1 cup icing each purple, teal, lime green, pink and blue using color combinations provided.

    Using Christmas Red icing color, tint 1 cup icing red.

    Reserve remaining icing white.

  3. Make Stencils. Print ONE DAY AT A TIME pattern. Using FoodWriter marker, trace letters on parchment and cut out. Keep on one rectangle piece and reserve inner letter pieces.
  4. Decorate cake. Using a decorator brush, apply very thin layer of shortening to back of the stencil and inner letter pieces and place on cake. Using tapered spatula, gently swipe assorted colors over letters. Keep swipes thin and let icing colors blend. Carefully remove stencils.
  5. Prepare bags. Prepare 6 bags: tip 4B with purple and pink icing; tip 2D with red icing; tip 1M with teal icing; tip 21 with lime green icing and tip 32 with blue icing.
  6. Pipe Border. Pipe stars along bottom border of cake.
