Spinach and White Cheddar Egg Bites

These egg cups are a great addition to your weekly meal prep and a nutritious way to start your day. Each one is chocked full of yummy spinach, cheddar cheese and egg whites and it’s easy to make individual portions when you bake them in a muffin pan. Serve them right away or freeze a batch to heat and eat later in the week. Either way, it’s a breakfast win.

  1. Preheat oven to 325°F. Prepare muffin pan with vegetable pan spray.
  2. Heat olive oil in small skillet over medium heat. Add red pepper and cook until softened, 2-3 minutes. Add spinach and cook just until wilted. Remove from heat; set aside.
  3. In large bowl, whisk together eggs, heavy cream, salt and pepper until blended. Add cooked vegetables and cheese; combine. Pour egg mixture evenly into prepared muffin pan.
  4. Bake 22-26 minutes or until egg mixture is set and lightly golden.
  5. Remove from oven and cool in muffin pan on cooling rack 5 minutes before removing and serving.
