

Sparkling Graduation Cake

- Melt candy. Melt Bright White candy according to package instructions. Prepare decorating bag with melted candy. Cut 3/8 in. tip in bag.
Make topper. Place printable template on cake board; cover with waxed paper. Pipe melted candy on waxed paper, following template. Immediately cover with gold pearlized sugars. Chill until set, about 10 to 15 minutes.
Flip topper over. Using remaining melted candy, attach two lollipop sticks to topper, one on back of “1”, one on back of “8”. Chill until set, about 5 to 10 minutes.
- Bake cake. Prepare cake batter following recipe instructions. Bake and cool two cake layers. Trim layers to 2½ in. high. Fill and stack layers for 5 in. high cake. Using spatula, ice cake smooth, leaving some spatula marks in icing.
Decorate cake. In small bowl, mix together about 1 teaspoon pearlized gold sugars and 1 teaspoon gold Sugar Pearls. Sprinkle around bottom of cake.
Insert topper into top of cake.
