This lacy and impressive decorating technique is great for covering cakes, filling in areas or serving as a background to an array of buttercream flowers. Made using a small round tip, the sotas technique is simply a long line of overlapping loops. It can be piped on top of your cake, or can be piped around the edges for fun and decorative border.

Use only a small amount of thinned buttercream in the decorating bag. This puts less pressure on your hands.

Start and stop strings of sotas at the edge of the area to keep from having loose ends in the middle of the design.

The harder you squeeze the decorating bag, and the slower you move the bag, the curvier your piped lines will be.
