Salt & Vinegar Potato Chip Spritz

These salt and vinegar potato chip spritz are bite-sized champions of balanced flavor. The buttery spritz texture easily hosts salty potato chips and bitter vinegar with a hint of floral from vanilla extract. A cookie press makes it easy to get identical crackers every time. Though they may not stay on the plate long enough for your guests to admire their design.

Ingredients

  • 1 cup (2 sticks) butter, softened

  • 1/4 cup granulated sugar, divided

  • 1 egg white

  • 3 tablespoons malt vinegar

  • 1/2 teaspoon Pure Vanilla Extract, 4 Oz.

  • 2 1/4 cups all-purpose flour

  • 1/2 teaspoon coarse sea salt

  • 1 cup potato chips, very finely crushed

  1. Preheat oven to 375ºF.
  2. In large bowl, beat butter, sugar and egg white until thoroughly combined. Add vinegar and vanilla; mix well.
  3. In small bowl, whisk together flour and salt; add to butter mixture and mix well. Add potato chips; mix well. Place dough in Cookie Press and press cookies onto ungreased cookie sheet.
  4. Bake 9-11 minutes or until edges are light golden brown. Cool 5 minutes on sheet. Remove from sheet; cool completely on grid.
  5. Note: Potato chips may be very finely crushed in food processor.
