Place roast in rack. Season with salt and pepper. Place roast in oven and immediately turn oven temperature down to 325°F. Roast approximately 1-1/2 hours, or until thermometer inserted in thickest part of meat reads 165°F. - Meanwhile, heat preserves, butter and mustard in small saucepan until mixture comes to a boil. Remove roast from oven; let stand 15 minutes. Brush roast with warm glaze. Garnish with parsley. Serve roast with remaining glaze.
