Ribbon Rosy Raccoon Cake

  1. One day in advance, make fondant ears. Print out Raccoon Template. Using fondant roller with purple guide rings, roll out 1 oz. white fondant. Using craft knife and template, cut out two ears. Let dry 8 to 10 hours on cornstarch-dusted cake board. Reserve remaining white fondant.
  2. Bake cake. Prepare cake batter following recipe instructions. Bake and cool one cake layer.
  3. Ice cake. Prepare buttercream icing following recipe instructions. Ice cake smooth.
  4. Tint fondant. Tint 1½ oz. fondant grey and ¼ oz. fondant light green using color combinations provided. Combine Black and Brown icing colors to get grey color shown. Combine Moss Green and Ivory icing colors to get light green color shown. Using Black icing color, tint 1 oz. fondant black.
  5. Cut fondnant. Using fondant roller with pink guide rings, roll out grey fondant. Using raccoon template and craft knife, cut out forehead, nose bridge and small slivers, about ¼ in. long, for ears. Set all pieces aside on cornstarch-dusted board.

    Using fondant roller with pink guide rings, roll out black fondant. Using raccoon template and craft knife, cut out eye mask (2) and nose. Using narrow end of tip 12, cut pupils (2). For mouth, roll 1/8 in. log of black fondant, about 1 in. long. For freckles, roll six 1/8 in. balls using black fondant. Set all pieces aside on cornstarch-dusted board.

    Using fondant roller with pink guide rings, roll out light green fondant. Using circle cutter, cut out green eyes (2). Set all pieces aside on cornstarch-dusted board. Reserve remaining green fondant.

    Using fondant roller with pink guide rings, roll out remaining white fondant. Using narrow end of tip 8, cut out eye highlights (2). Set aside on cornstarch-dusted board.

  6. Decorate cake. Using damp brush, assemble eye pieces, placing green eye on black mask, then adding pupil and eye highlight. Also add grey highlight to each inner ear, using damp brush to attach, if necessary.

    Arrange pieces on cake, placing forehead, eyes, nose, nose bridge, mouth and freckles.

    Insert ears into top side of cake, inserting lollipop sticks under ears for added support, if necessary.

  7. Make ribbon roses. Tint ¼ oz. fondant coral using color combination provided. Combine Creamy Peach and Pink icing colors to get coral color shown. Using Pink icing color, tint ¼ oz. fondant pink. Using Creamy Peach icing color, tint ¼ oz. fondant peach.

    Using fondant ribbon rose technique, make six ribbon roses, two of each color.

    Using remaining green fondant and craft knife, cut out 5 to 6 leaves.

    Arrange ribbon roses and leaves in bunch under ear of raccoon, using icing to attach, if necessary.
