Ingredients

  • 3/4 cup solid vegetable shortening
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 6 cups powdered sugar (about 1 3/4 pound confectioners' sugar)
  • 1/4 cup coconut milk
  • 1/4 teaspoon coconut extract (optional)
  • Topping

  • Shredded coconut (optional)

  • Finish off your treats with toasted coconut flakes
  • To store: Frosting should be stored in an airtight container in the refrigerator for 2 weeks and can be frozen for up to 6 weeks. Bring back to room temperature and re-whip before using.
