In medium saucepan, bring water, honey, cinnamon stick, orange zest and juice to a boil.
Peel pears, leaving the stem intact.
Add pears to pan. Reduce heat to simmer and cook until pears are fork-tender, about 30-40 minutes. Remove from heat and stir in vanilla extract. Chill the pears in the syrup.
