Patriotic Firework Cookies

1. - Make Cookies Preheat the oven to 350°F.
2. - In a large bowl, cream the butter and sugar with an electric stand mixer or hand mixer until light and fluffy. Beat in the egg, and vanilla and almond extracts.
3. - Mix together flour, baking powder, and salt. Add dry ingredients to the butter mixture 1 cup at a time, mixing after each addition. Once the dough mixes into a ball, you're done mixing. Test that the dough is sticky and holds a shape but doesn't stick to your fingers. Do not chill dough.
4. - Divide the dough into 2 balls, then form them into 2-inch-thick rectangles discs. This will keep the dough from falling apart while rolling, and the rectangular shape will help you cut more cookies out of each rolling.
5. - On a floured surface, roll out the dough into a circle approximately 12 inches in diameter and 1/8-1/4 inch thick.
6. - Dip a 3-inch round cookie cutter in flour (repeating before each use) to cut circle shapes.
7. - Bake the cookies on an ungreased baking sheet with or without parchment paper. Bake for 8-11 minutes or until cookies are lightly browned. Transfer to a wire rack to cool completely.
8. - Decorate Cookies Use White Cookie Icing with the tip opened a smaller amount (for an outlining-sized opening) to outline a circle around the top edge of each cookie. Allow to set for a few minutes before opening the tip more widely to flood inside the shape with the same icing. Use a toothpick to pop any bubbles in the icing.
9. - While the white icing is still wet, add two dots of Red Cookie Icing to the top of a cookie. Use a toothpick to drag cascading lines from the circle to look like a firework burst. Add a dot of Blue Cookie Icing on top of the center of each red burst, then use a toothpick to drag blue cascading lines between the red icing pulls.
10. - Optional: Add Red, White, and Blue Sprinkles around the edges of some of the cookies before the icing dries completely.
11. - Repeat until all cookies have been decorated, then allow the icing to set completely (about 4 hours) before serving.
