No Bake Peanut Butter Cookies

Quick, easy and delicious. That’s our no-bake peanut butter cookie recipe summed up in three words. These cookies are a tasty bite of peanut butter and chocolate all in one. If you want to satisfy a quick craving but don’t want to bake, it’s the perfect dessert that whips up in minutes.

  1. Prepare cookie sheet with parchment paper.
  2. In medium saucepan, combine butter, sugar and milk. Cook over medium heat, stirring occasionally until melted. Bring mixture to a boil and allow to boil for 1 minute.
  3. Remove mixture from heat and stir in peanut butter, vanilla extract and salt. Add oats and stir until coated.
  4. Drop by heaping tablespoonfuls onto prepared cookie sheet. Allow to sit at room temperature until firm, about 30 minutes.
  5. In small microwavable bowl, melt chocolate chips. Microwave at half (50%) power 1 minute; stir. Microwave on 50% power in 30-second intervals, stirring between each, until chocolate is melted. (Chocolate can also be melted on top of stove in heavy saucepan over low heat). Stir until smooth and drizzle chocolate over cookies.
