Preheat oven to 350°F. Prepare muffin pan cups with vegetable pan spray or line with baking liners. Combine instant coffee powder and water; Mix well and set aside.
In large bowl, beat butter and granulated sugar with electric mixer until light and fluffy. Add eggs, one at a time; Mix well. Add melted chocolate, vanilla and coffee mixture; Mix well. Combine flour, baking soda and salt. Slowly add to butter mixture; Mix well. Spoon into prepared pan.
Bake 18-20 minutes or until center of cupcake springs back when lightly touched. Cool in pan on cooling grid 10 minutes. Remove from pan; cool completely.
