Ingredients: 1 tablespoon instant coffee; 1/2 cup warm water; 4 tablespoons butter, at room temperature; 1 cup granulated sugar; 2 eggs; 3 ounces unsweetened chocolate, melted; 1-1/2 teaspoon vanilla extract; 1 cup all-purpose flour; 1/2 teaspoon baking soda; 1/4 teaspoon salt; Muffin pan; Baking liners

A flavor that will wake up any celebration! Mocha Cupcakes call for a splash of instant coffee in the batter to create that satisfying taste. Great with our Mocha Icing recipe!

1 tablespoon instant coffee
1/2 cup warm water
4 tablespoons butter, at room temperature
1 cup granulated sugar
2 eggs
3 ounces unsweetened chocolate, melted
1-1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt

- Preheat oven to 350°F. Prepare muffin pan cups with vegetable pan spray or line with baking liners. Combine instant coffee powder and water; Mix well and set aside.
- In large bowl, beat butter and granulated sugar with electric mixer until light and fluffy. Add eggs, one at a time; Mix well. Add melted chocolate, vanilla and coffee mixture; Mix well. Combine flour, baking soda and salt. Slowly add to butter mixture; Mix well. Spoon into prepared pan.
- Bake 18-20 minutes or until center of cupcake springs back when lightly touched. Cool in pan on cooling grid 10 minutes. Remove from pan; cool completely.
