Make bread. Preheat the oven to 325ºF. Prepare 9 in. x 5 in. loaf pan with vegetable pan spray.
In a large bowl, combine flour, sugar, baking powder and salt then set aside.
In a separate bowl, combine coconut milk, melted butter, eggs, lime zest and coconut extract.
Add wet mixture to dry ingredients, stirring just until combined.
Pour into the prepared pan. Bake 75-80 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes in the pan then turn bread out onto a cooling rack and cool at least 1 hour.
Make glaze. In a medium bowl, whisk together powdered sugar, 3 tablespoons coconut milk, lime juice and 1/2 teaspoon lime zest.
Drizzle the glaze over cooled bread and serve warm or at room temperature.
