  • 3 cups all-purpose flour
  • 1 1/3 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut milk
  • 1/2 cup (1 stick) butter, melted
  • 2 eggs
  • 1 teaspoon lime zest
  • 1/2 teaspoon coconut extract
  • Lime Glaze

  • 2 cups powdered sugar (confectioners' sugar)
  • 3 tablespoons coconut milk
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon lime zest

Notes

  • To Store: Store completely cooled bread in an airtight container at room temperature for up to one week.
  • To Freeze: Wrap the unglazed bread in plastic wrap and aluminum foil once completely cooled and freeze for up to a month. Finish with the lime glaze after the bread has thawed.
