Lime Coconut Milk Quick Bread

  1. Make bread. Preheat the oven to 325ºF. Prepare 9 in. x 5 in. loaf pan with vegetable pan spray.
  2. In a large bowl, combine flour, sugar, baking powder and salt then set aside.
  3. In a separate bowl, combine coconut milk, melted butter, eggs, lime zest and coconut extract.
  4. Add wet mixture to dry ingredients, stirring just until combined.
  5. Pour into the prepared pan. Bake 75-80 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes in the pan then turn bread out onto a cooling rack and cool at least 1 hour.
  6. Make glaze. In a medium bowl, whisk together powdered sugar, 3 tablespoons coconut milk, lime juice and 1/2 teaspoon lime zest.
  7. Drizzle the glaze over cooled bread and serve warm or at room temperature.
