Cinnamon Streusel Bread

  1. Preheat oven to 325°F. Prepare 9 in. x 5 in. loaf pan with vegetable pan spray.
  2. In small bowl, combine flour, baking powder, cinnamon, baking soda and salt; set aside.
  3. In large bowl, beat butter and granulated sugar with electric mixer on medium speed until light and fluffy. Add eggs, one at a time, scraping down bottom and sides of bowl as needed. Add vanilla; beat well. Add flour mixture in two additions alternately with sour cream, mixing only until incorporated.
  4. For streusel, stir together brown sugar, cinnamon and flour in small bowl, breaking up any chunks of brown sugar. Reserve half of mixture in a separate bowl.
  5. Spread half of the batter in bottom of prepared pan. Sprinkle with half of the streusel mixture. Top with remaining batter and run a butter knife or small spatula through the batter to marble it slightly. Smooth top of batter. Cut butter into remaining half of cinnamon mixture with a fork until crumbly. Sprinkle streusel over top of loaf.
  6. Bake 65-70 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove to cooling grid to cool completely.
  7. For icing, in small bowl, combine confectioners’ sugar and milk; drizzle over top of loaf.
