Jumbo Ice Cream Sandwich Cookies

Everyone knows cookies make the best ice cream sandwiches. With this Jumbo Ice Cream Sandwich Cookie recipe, you can make your own delicious cookies to create the ultimate warm weather treat. Use vanilla ice cream or pick your favorite ice cream for a tasty summer dessert.

Ingredients

  • 1/2 teaspoon Imitation Almond Extract

  • 1-1/2 teaspoons Imitation Clear Vanilla Extract

  • 1 cup unsalted butter, softened

  • 1-1/2 cups granulated sugar

  • 1 egg

  • 1 teaspoon salt

  • 2-3/4 cups all-purpose flour

  • Vanilla Ice Cream

  • Assorted Brights and Pastels Sprinkles Mixes 6.06 oz.

  • Mega Cookie Pan, 15 x 21-Inch

  • Cooling Grid

  • The Really Big Spatula

  1. Preheat oven to 350°F. Prepare cookie sheets with parchment paper.
  2. In a medium bowl, combine flour and salt.
  3. In mixing bowl, beat butter and sugar with electric mixer on medium-high speed until light and fluffy. Beat in egg and extracts. Add flour mixture 1 cup at a time, mixing on low after each addition.
  4. Roll dough into 1-1/2 in. balls and roll in sprinkles. Place 2 in. apart on prepared cookie pan. Flatten cookies slightly with palm of hand.
  5. Bake 15-17 minutes or until centers of cookies are semi-firm to the touch. Cool cookies on pan on cooling grid 2 minutes. Remove from pan to cooling grid; cool completely.
  6. Assemble sandwiches. Using vanilla ice cream, make cookie sandwiches.
