How to Pipe Lattice

Choose any corner of the surface to pipe the first set of diagonal lines for the lattice.
Using a Tip 3 (or any small round tip), hold the bag at an angle and touch the tip to the surface. Squeeze a small amount of icing to attach the starting point to the surface.
Lift the tip slightly and move diagonally as you squeeze, letting the line of icing drop into place. Guide the placement of the line as the icing squeezes out of the tip.
Push the tip back to the surface to finish the line. Stop squeezing and pull away. Repeat until the surface is covered with diagonal lines.
Using the same steps, pipe the second set of lines going in the opposite direction to create a crisscross pattern.
Tips:
- The lattice is a variation of piping an outline
- For an evenly spaced lattice, use a ruler and a Food Writer (or small dots of icing).
- While lines are usually piped with a round tip, try using a small star tip or a basketweave tip to create different widths and texture.
