How to Make Fondant Ruching

Create a dramatic effect with fondant ruching. This technique can be done in any size by adjusting the measurements as needed. Use it to drape around an entire cake or create a smaller fondant ruching border around the sides of a cake.

  1. Using a fondant roller with pink guide rings, roll out kneaded fondant to 1/16 in. thick.
  2. Cut a 7 in. x 5 in. rectangle with a Fondant Trimmer or a pizza cutter.
  3. Place 4 cookie sticks dusted with cornstarch on the surface and lay the fondant on top.
  4. Position 3 cookie sticks in between to create folds.
  5. Press all 7 sticks closer and then carefully remove the sticks.
  6. Only slightly pinch the ends together and lay the ruched fondant on the cake.
