How to Ice a Gingerbread House Roof with a Spatula

There's no need to have a plain gingerbread house roof if you have a spatula on hand. Many different textures can be created by using a spatula to make a look of fallen snow, shingles and stucco.

  1. With a spatula, spread icing over the area to be covered.
  2. To ice smooth: Run the spatula lightly over the icing in the same direction, blending it in for an even look.

    Hint: To ice small areas, use a decorating bag and tip, squeeze icing onto the area, and then smooth with a small spatula.

  3. Shingles (Scallops): Ice the area thickly. Starting at the bottom edge of the roof and working up toward the peak, use the tip of the spatula to imprint scallops. Lightly press the spatula into the icing and drag upward to form the scallop. Repeat in rows.

    Hint: Scallops can also be iced at an angle or slightly offset to create a different look.

  4. Stucco: Touch the spatula to the icing and pull up quickly, creating short peaks. Continue the technique over the icing area.
