Heirloom Tomato Pizza

Sure, take-out pizza is great, but there’s nothing quite like a homemade pizza, fresh from the oven. Made using a homemade pizza crust and topped with fresh tomatoes, garlic, basil and cheese, this Heirloom Tomato Pizza is a delicious way to treat your family.   1. In the bowl of a stand mixer fitted with the dough hook attachment, combine flour, salt and yeast. Gradually add water, 3 tablespoons olive oil and honey; mix on low to medium speed until a smooth, elastic dough forms, about 7-10 minutes.
  2. Brush large bowl with 1 tablespoon olive oil. Form dough into a ball, place into bowl, and cover with plastic wrap. Let stand in a warm place 40-60 minutes or until doubled in size.
  3. Meanwhile, place sliced tomatoes on paper towels and sprinkle with salt. Cover with another paper towel and allow to stand 30-45 minutes.
  4. Preheat oven to 425°F. Brush 16 in. pizza pan with 1 tablespoon olive oil.
  5. Gently punch down dough and place on prepared pan. Stretch and press dough into a 16 in. circle in prepared pan. Brush dough with 1 remaining tablespoon olive oil and prick dough with a fork. Spread with pizza sauce, sprinkle with garlic, and top with mozzarella. Bake 15 minutes.
  6. Remove pizza from oven and top with tomato slices, shallot, and 2 tablespoons Parmesan cheese. Bake 10-15 minutes longer until pizza is golden brown around edges.
  7. Let cool in pan on cooling grid 5 minutes before cutting and serving. Top with basil leaves. Sprinkle with crushed red pepper and additional grated Parmesan cheese, if using.
