Ingredients

  • 2 1/2 cups all purpose flour

  • 1 1/2 teaspoons baking powder

  • 3/4 teaspoon salt

  • 6 tablespoons butter

  • 1 1/4 cups frozen blueberries

  • 1/2 cup plus 2 teaspoons wheat germ

  • 1/2 cup light agave nectar

  • 4 egg whites

  • 1 cup low-fat buttermilk

  • 2 teaspoons grated lemon zest

  1. Preheat oven to 375°F. Prepare 12 cup muffin pan with vegetable pan spray.
  2. In large bowl, combine flour, ½ cup wheat germ, baking powder and salt; mix well.
  3. In separate bowl, whisk together agave nectar, egg whites, buttermilk, butter and lemon zest. Add to flour mixture; stir just until dry ingredients are moistened.
  4. Gently fold berries into the mixture, ensuring you don't overmix and don't break berries.
  5. Divide mixture evenly among cavities. Sprinkle with remaining 2 teaspoons wheat germ.
  6. Bake 20-22 minutes or until toothpick inserted in center comes out clean.
  7. Cool in pan on cooling rack 5 minutes. Serve warm or at room temperature.
