Graduation Cookie Sandwich Pops

Celebrate your graduate with these Graduation Cookie Sandwich Pops. Decorated using Candy Melts candy, these cookie pops are easy to customize to fit your needs. Write the graduate's name, year or messages of encouragement. These also make a great party favor if wrapped in a treat bag and tied with a ribbon.

Insert sticks into cookie. Melt Bright White candy according to package instructions. Carefully untwist sandwich cookie. Insert lollipop stick into middle of cookie. Using melted Bright White candy, sandwich cookie back together. Chill until set, about 5 to 10 minutes.
Dip cookies. Melt Royal Blue candy according to package instructions. Dip cookies in melted white and blue candy. Transfer to parchment paper-lined cake board. Chill until set, about 15 to 20 minutes.
Decorate cookies. Using sprinkles and remaining melted candy, decorate cookies.
Sprinkled Cookies: Prepare decorating bag with melted candy. Cut small tip in bag. Pipe line of candy around cookie. Immediately cover with jimmies or nonpareils.
Drizzled Cookies: Prepare two decorating bags with tip 1. Fill separately with remaining melted white and blue candy. On remaining cookies, pipe dots, drizzle candy or write messages in candy of opposite color (use melted white candy on blue cookies).
Chill all cookies until set, about 10 to 15 minutes.
