  1. GUM PASTE COLORS TINTED:

    1. Tint ultra-concentrated gum paste. Use Color Right base colors and QuickCount color formulas to tint gum paste in the following shades:

    ? Pastel Pink (formula 1895): 1 oz. gum paste + 1 P ? Autumn Green (formula 377): 1 oz. gum paste + 25 Y + 3 B + 2 BR + 1 BK

    2. Mix ultra-concentrated color gum paste with white gum paste.

    ? For pink, knead a 1/2 in. ball of ultra-concentrated pink into 6 oz. white gum paste

    ? For green, knead a 1/2 in. ball of ultra-concentrated green into 1 oz. white gum paste

    FONDANT COLORS TINTED:

    Use Color Right base colors and QuickCount color formulas to tint fondant in the following shades:

    ? Neutral Sand (formula 7506): 24 oz. fondant + 1 BR + 1Y

    ? Winter Ice Blue (formula 2905): 24 oz. fondant + 1 BK + 1 B

    Also tint an additional 12 oz. of sand fondant as follows:

    1. Tint ultra-concentrated fondant.

    ? Neutral Sand (formula 7506): 1 oz. fondant + 1 BR + 1 Y

    2. Mix ultra-concentrated color fondant with white fondant.

    ? Knead a 3/4 in. ball of ultra-concentrated sand into a 12 oz. white gum paste.

    Combine all sand fondant to make 36 oz. used to cover cake.

    ICING COLOR TINTED:

    Use Color Right base color and QuickCount color formula to tint icing in the following shades:

    1. Tint ultra-concentrated icing. Use Color Right base colors and QuickCount color formulas to tint icing in the following shades:

    ? Winter Ice Blue (formula 2905): 1/4 cup icing + 1 BK + 1 B

    2. Mix ultra-concentrated color icing with white icing.

    ? For 6 in. cake: Add 1 to 2 teaspoons ultra-concentrated blue to ½ cup white icing.

    ? For 10 in. cake: Add 1 to 2 teaspoons ultra-concentrated blue to 1 cup white icing.

    ?\tReserve remaining 4-3/4 cups icing white

  2. Make peony three days in advance. Tint gum paste pink and green. Make one wired peony in pink following instructions in cut-outs set, excluding the last row of large petals. Let dry following instructions.

    Make two wired gum paste leaves in green, following instructions in cut-outs set. Let dry following instructions.

  3. Make layered cake. Bake and cool two 6 in. cake layers and one 10 in. cake layer.
  4. Cover cakes with fondant. Level, fill and stack cakes on same-size cake circles for a 2-layer 6 in. cake, 6 in. high and a 1-layer 10 in. cake, 2 in. high.

    Tint fondant sand and blue. Use spatula and white icing to lightly ice cakes smooth. Cover 6 in. cake with sand fondant and 10 in. cake with ice blue fondant.

  5. Assemble cake. Prepare cakes for stacked construction with center core rods and support rods and caps. Stack cakes on cake plate.
