Easy Raspberry Buttercream Frosting

Add a sweet, pop of pink to your next baked treat with our raspberry buttercream! It has a delicious raspberry flavor that’s perfect for topping off lemon cupcakes or even a chocolate layer cake. The frosting is firm enough for both piping and spreading.   1. In a large bowl, beat shortening and butter with an electric mixer until the mixture is light and fluffy.
  2. Add vanilla and mix well.
  3. Gradually add the sugar, one cup at a time, beating well with the electric mixer on medium speed scraping the sides and bottom of the bowl often. When all the sugar has been mixed in, the frosting will appear dry.
  4. Next, add the raspberry preserves and beat at medium speed until the frosting has a light and fluffy consistency.
  5. Frosting is now ready for piping or spreading. If desired, add a drop of Wilton Rose Icing Color to deepen the pink color. Garnish, if desired, with fresh raspberries.
