2 1/2 cups all-purpose flour, plus more for dusting
1 tablespoon granulated sugar (optional)
1 tablespoon baking powder
3/4 teaspoon salt
5 tablespoons cold butter, cut into 1/2-inch cubes
3/4 cup milk, plus more for brushing

- Preheat oven to 450°F.
- In a large bowl, stir together flour, sugar (if using), baking powder and salt. Using a pastry blender or two forks, cut in butter until mixture resembles coarse crumbs.
- Stir milk into flour mixture until a shaggy dough forms.
- Turn dough out onto a lightly floured surface and knead 3-4 times or until dough just comes together. Roll dough to 3/4 in. thickness and cut 12 biscuits using a 2 in. round cutter, re-rolling dough once if necessary. Dough may also be cut into squares or rectangles with a knife.
- Place biscuits on ungreased cookie sheet. Brush tops lightly with milk. Bake 8-10 minutes or until biscuits are lightly golden. Serve warm.
