  1. Preheat oven to 350°F. Prepare cookie pans with parchment paper.
  2. In small bowl, combine flour and salt.
  3. In large bowl, beat butter with electric mixer until light and fluffy. Gradually add sugar, beating well. Add egg yolk and vanilla; mix well. Slowly add flour mixture, beating on low speed until incorporated. Increase speed to medium and beat 2 minutes. Stir in sprinkles.
  4. On heavily floured surface, roll out dough 1/4 in. thick. Using scalloped side of pastry wheel, cut strips 1/2 in. wide by 4 in. long. Carefully place on prepared pans.
  5. Bake 12-15 minutes or until light golden brown. Cool cookies on pan on cooling grid 5-10 minutes, then remove to cooling grid to cool completely. Serve with melted Candy Melts Candy, if desired.
