Class Description
Step into the sweet world of cookie artistry in this fun and interactive 3-hour class! With the guidance of Wilton's Executive Pastry Chef, Walleska Cianfanelli, you’ll create whimsical shaker cookies—decorated treats with clear isomalt (a sugar substitute that melts into clear, glass-like designs “windows” and colorful sprinkles that shake inside. Cookies will be pre-baked so you can focus on the fun parts: sugar techniques, assembly, and decorating. Each student will complete 8 cookies (2 each of 4 different designs) to take home, perfect for sharing or gifting.
Along the way, you’ll practice
- Safely melting and pouring isomalt,
- Using a chef torch to remove air bubbles from isomalt
- Assembling layered cookies with sprinkles sealed inside
- Color theory and choosing color combinations
- Using royal icing for outlining, flooding, and clean finishes
- Adding decorative details, including wet-on-wet designs and accents
These versatile techniques can be adapted for cookies year-round—think birthday parties, baby showers, weddings, or any celebration where you want to wow guests with something unique and interactive.
An interactive demo on how to cook isomalt for this technique will be done at the beginning of class.

Pre-requisites
- Students should have some experience with using Royal icing to flood and outline.
