- Bake cookies. Prepare cookie dough following recipe instructions. Using “B” cut-out, cut out cookies. Bake and cool.
- Assemble cookies. Prepare ganache recipe following recipe instructions. Let cool slightly, until spreading consistency. Spread bottom of cookie with ganache; sandwich with another cookie. Repeat with remainder of cookies.
- Decorate cookies. Arrange cookie sandwiches on parchment paper. Carefully rewarm remaining ganache (microwave 5 seconds or heat over water bath until pourable). Drizzle ganache with spoon over sandwich cookies. Let set.
