Chewy Molasses Cookies

A little bit of sweet, a little bit of spice and a lot of yum is what you get when you bite into these chewy molasses cookies. Even better when they are still a tiny bit warm from the oven.

  1. Preheat oven to 350°F.
  2. In medium bowl, combine flour, baking soda, ginger, cinnamon and salt. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer until fluffy. Add egg; beat until combined. Add molasses; beat until combined. Add flour mixture, beating until just incorporated. Roll rounded tablespoons of dough into balls. Roll in sparkling sugar. Place about 2 in. apart on ungreased cookie pan.
  3. Bake 10-12 minutes or until edges are set (centers will be soft). Cool 2 minutes; remove to cooling grid. Cool completely.
