A little bit of sweet, a little bit of spice and a lot of yum is what you get when you bite into these chewy molasses cookies. Even better when they are still a tiny bit warm from the oven.
In medium bowl, combine flour, baking soda, ginger, cinnamon and salt. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer until fluffy. Add egg; beat until combined. Add molasses; beat until combined. Add flour mixture, beating until just incorporated. Roll rounded tablespoons of dough into balls. Roll in sparkling sugar. Place about 2 in. apart on ungreased cookie pan.
Bake 10-12 minutes or until edges are set (centers will be soft). Cool 2 minutes; remove to cooling grid. Cool completely.
