Roll out half of pie dough to an 11-inch circle and fit into pie pan, letting edges hang over sides. - Fill pan with pie filling. - Roll out second half of pie dough to an 11-inch circle. With pastry wheel or knife, cut 11 1/2-in. strips. - Place 6 strips vertically on pie. Place remaining strips horizontally on pie, following photos to weave lattice. Trim long lattice pieces and fold over edges of crust and crimp. Brush top of crust with egg mixture and sprinkle with sparkling sugar. - Place pie on baking sheet (to catch drips) and bake 40 to 45 minutes or until golden brown. - Cool completely in pan on cooling grid.
