These Bright Neon Halloween Cookies look like they’re actually glowing! Decorated using royal icing, these roll-out sugar cookies feature three fun Halloween icons – a pumpkin, a bat and a “boo” message. Use light and dark shades of violet, pink and orange icing to create this unique effect, which looks even better set against the black icing background. Since these cookies are decorated with royal icing, they will dry hard and will stand up to packaging, but be sure to allow at least 24 hours for drying time.
Bake cookies one day in advance. Prepare cookie dough following recipe instructions.
Roll out to 1/8 in. thickness. Using round “A”, oval “A”, and square “B” cutters, cut out cookies.
Bake and cool.
Tint icing. Combine Pink and Burgundy icing colors to get light pink and dark pink colors shown.
Prepare 2 recipes of royal icing following recipe instructions.
Using Black icing color, tint 1 cup icing black. Using Lemon Yellow, Orange and Violet icing colors, separately tint ¼ cup icing each yellow, orange, light violet and dark violet.
Tint ¼ cup icing each light and dark pink using color combination provided.
Thin all icing to 20 drop count. Prepare 7 parchment bags separately with black, yellow, orange, light violet, dark violet, light pink and dark pink icing.
Decorate cookies. For best results, decorate one cookie at a time. Snip small hole, about 1/8 in., off end of black icing bag. Flood oval cookie. Let set, about 2 minutes.
Snip small hole off end of dark pink icing bag, just small enough for icing to start coming through. Pipe bat outline. Let set, about 2 minutes.
To pipe highlight, snip small hole off end of light pink icing bag, just small enough for icing to start coming through. Over pipe bat, staying inside the line of the dark pink outline.
Repeat with remaining cookies (square cookies use orange outline and yellow highlight; round cookies use dark violet outline and light violet highlight).
