Birthday Cake Whoopie Pies

These Birthday Cake Whoopie Pies are ready for celebrating!   1. Preheat oven 325°F. Prepare pan with vegetable pan spray.
  2. In a large bowl, beat butter and sugar with an electric mixer on medium speed until light and fluffy, about 3 minutes. Add egg and vanilla; beat until well combined.
  3. In another bowl, sift together the flour, baking powder and salt. Add half of the dry ingredients into the butter mixture and mix on low speed. When dry ingredients are almost incorporated, stop the mixer and add the milk. Continue to mix on low speed until milk is almost incorporated. Stop the mixer and add the remaining dry ingredients.
  4. Mix on low until just combined. Fold in the rainbow jimmies. Spoon 2 tablespoons of batter into each cavity; spread batter to the edges. Cavities should be about 2/3 full. Sprinkle additional jimmies on top of cavities before baking.
  5. Bake for 11-13 minutes or until the top of the cake springs back when lightly touched. Allow the cakes to cool in pan on a cooling grid for 8 minutes. Remove and cool completely before filling.
  6. For filling, in a large mixing bowl, beat butter with an electric mixer on medium speed until creamy. Add powdered sugar and salt; mix well. Add marshmallow crème and vanilla; blend well. Add Wilton Icing Color, if desired. Pipe or spread filling onto Whoopie pies and decorate with sprinkles, if desired.
