Sotas Technique

This lacy and impressive decorating technique is great for covering cakes, filling in areas or serving as a background to an array of buttercream flowers. Made using a small round tip, the sotas technique is simply a long line of overlapping loops. It can be piped on top of your cake, or can be piped around the edges for fun and decorative border.

  1. Make buttercream. Prepare buttercream frosting to thin consistency following recipe instructions. Prepare decorating bag with tip 1 and fill no more than 1/4 full with prepared buttercream.
  2. Pipe design. Hold bag straight up at 90-degree angle, with tip 1/2 to 1 in. above surface. Squeeze bag, allowing icing to drop randomly in a series of overlapping loops. Cover area edge to edge. When done, stop pressure and pull tip away.
