Christmas Chocolate Snowflake Truffles

Christmas Chocolate Ganache Truffles are beautifully detailed to look like falling snowflakes. These picture-perfect bite-size delights are great for holiday gift-giving.

Ingredients

  • Basic chocolate ganache and truffles recipe

  • 1 12 oz. package Light Cocoa Candy Melts

  • 1 12 oz. package White Candy Melts Candy

  • 1/2 cup heavy whipping cream

  • Tools

  • Silicone Snowflake Mini Treat Mold

  • Small angled spatula

  • Cake decorating bush

  • Decorating Bags

  • Medium bowl

  • Medium saucepan

  1. Prepare snowflake shells: In a medium bowl, melt White Candy Melts Candy according to package directions.
  2. Using a decorating brush and the melted Candy Melts Candy, paint the inside of the snowflake mold cavities. Place molds in the refrigerator to set, about 5-10 minutes.
  3. Remove mold from the refrigerator and paint a second layer of White Candy Melts Candy over the first set layer. Allow the second layer to set.
  4. Continue the painting and setting layers until candy is about 3/16 inch thick to create a shell.
  5. Once the shell is created, take a knife and level the top of the shell.
  6. Make the ganache: Finely chop Light Cocoa Candy Melts Candy into pieces. Add whipping cream to a medium saucepan and bring to a simmer. Cream will start to steam, and the edges will start to bubble.
  7. Remove from heat and add in the chopped Candy Melts Candy. Stir until smooth and glossy. The mixture may appear lumpy or broken while stirring, continue stirring and it will come together.
  8. Remove saucepan from heat and allow mixture to chill until cool, not firm, about 10 minutes.
  9. Fill snowflake shells with ganache. Prepare a decorating bag with chocolate ganache. Cut a small hole in the tip of the bag and squeeze ganache filling into shells leaving a 3/16 inch space at the top.
  10. Allow ganache filling to set. Next, use a decorating brush to paint a top layer of white Candy Melts Candy onto the top of the ganache to complete the snowflake shell.
  11. Chill to set, about 5-10 minutes. Once firm, gently press the bottom of cavities to release.

Notes

  • Make a couple weeks in advance. These truffles can be made a couple weeks ahead and stored in a cool dry place, covered.

    Storing truffles: These can be stored at room temperature in a cool dry place away from temperature changes.

    Releasing truffles from silicone mold. Make sure truffles are cooled, then flex the mold back and forth for truffles to pop out.

    Melting Candy Melts Candy: Use a low temperature setting on the microwave. Melt candy melts candy for 2 minutes at 40% then stir and check consistency. Place back in the microwave for an additional minute then remove and stir.

    To thin Candy Melts Candy: Thin Candy Melts Candy by using EZ Thin. Add 2 tablespoons to 12 oz. melted candy, and stir until completely incorporated. If you’re using less than 12 oz. of melted candy, start with a small amount of EZ Thin, then continue adding until you achieve the correct consistency.

    You can also thin out your melted candy with solid vegetable shortening (2 tablespoons per 12 oz. bag). Do not use liquid vegetable oil, butter, milk, water or any other liquid to thin your candy. These will all cause your candy to break or seize, rendering it unusable. This can also happen if your candy is burned or overheated.
