Raspberry Jam Shortbread Cookies

These sweet Raspberry Jam Shortbread Cookies are great for holiday or Valentine's Day baking. Use buttercream and your favorite raspberry jam to sandwich together two tasty chocolate shortbread cookies, then gift these cookies to family and friends for Christmas or Valentine's Day.

  1. Bake cookies. Prepare Salted Caramel Shortbread Cookie recipe, omitting Treatology flavors and glaze for garnishing. Roll out cookie dough. Using scalloped cut-out “B”, cut out cookies. Bake and cool.
  2. Tint icing. Using Red-Red icing color, tint 1½ cups icing pink. Using knife or spatula, spread icing on underside of half of cookies.
  3. Assemble cookies. Using knife or spatula, spread icing on underside of half of cookies. Spread raspberry jam on remaining cookies. Sandwich cookies together.
