

Raspberry Coconut Cookie Pizza
Have you tried pizza for dessert? Pizza in any form is fun to make and scrumptious to eat. Bake a cookie crust, add raspberry jam "sauce", drizzle with Wilton white Candy Melts® candy and sprinkle with coconut for the "cheeses." So easy-to-make, and it feeds a crowd.

Ingredients
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1 cup granulated sugar
1 egg
1 tablespoon milk
1 teaspoon Pure Vanilla Extract, 4 Oz.
3/4 cup seedless raspberry jam
1/4 cup sliced almonds
1/2 cup Bright White Candy Melts Candy
1/2 cup coconut flakes

- Preheat oven to 350°F. Prepare pizza pan with vegetable pan spray.
- In large bowl, stir together flour, baking powder and salt.
- In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Add egg, milk and vanilla; mix until well combined. Add flour mixture and mix until just combined and press into prepared pan. Prick dough with fork and bake 15-20 minutes or until golden brown. Cool completely in pan on cooling grid.
- Spread raspberry jam over cookie; top with almonds.
- In medium microwave-safe container, melt bright white Candy Melts candy according to package instructions. Drizzle over pizza. Sprinkle with coconut.
